Asian Sweet & Spicy Slaw

With the hits of citrus from tangerine and orange and the sweet and spicy tang of the dressing, this cabbage slaw is an easy go-to for hot summer days. This refreshing salad is inspired by one of my favorite salad kits that I too often had to rely on during busy school weeks. In this recipe, I re-create this super simple American classic, saying goodbye to the salad kit for good.


Amount: 6 servings

Ingredients: 
Salad (for 6 servings):
1 bag of tricolored cabbage mix 
1 bag of red cabbage
1 carrot
1 bag of sugar snap peas
30 oz of canned mandarin slices 
3 stalks of scallion
1 bag of wonton strips
sliced almonds

Dressing (per serving):
1 tbspn of the juice from an orange
3/4 tbspn of agave syrup
1 clove of garlic, finely minced
1 tsp of fresh minced ginger or 1/4 tsp of ground ginger powder
1 tsp of Sambal Oelek Red Chili Paste
1 tsp of Low Sodium Soy Sauce
1/2 tspn of tahini
1 1/2 tspn of rice vinegar

Directions:
  1. Grate the carrot into thin shreds. Thinly slice the red cabbage.
  2. Cut the sugar snap peas into 1/2 in. bite-sized pieces and thinly slice 1/2 a stalk of scallion per serving.
  3. Place all of the salad ingredients into a bowl (amount for 1 serving), excluding the wonton strips.
  4. Mix all of the dressing ingredients together, and pour over the assembled salad. Toss to coat the salad evenly. 
  5. Top with wonton strips and enjoy!
