Chia Seed Pudding
October 23, 2025There are endless variations you can create with just a simple base:
1.) To a blender, add 1 cup of milk and 1 cup of plain or Vanilla nonfat Greek yogurt. Add a drizzle of honey to sweeten and a dash of vanilla extract. Blend until smooth.
2.) Pour the mixture into a storage container, and add a little less than 1/2 cup of chia seeds. Stir until the chia seeds are evenly suspended within the mixture. I like to split this into two shallow containers. Chia seeds will sink in a deeper container, which creates inconsistency in the texture of the pudding.
3.) Place the containers in the fridge overnight to thicken into a pudding-like consistency.
4.) To serve, top it with cacao nibs, hemp seeds, pumpkin seeds, desiccated coconut, granola/protein cereal, and fresh fruit, such as mangos or berries.
Variations
You can consider blending different ingredients into the base to create different pudding flavors:
- 1 tablespoon of cacao powder to make a chocolate version. Top with sliced strawberries or raspberries.
- Fresh fruit such as mangoes or strawberries to make a fruity pudding base.
- Use vanilla Greek yogurt. Add 1 cup of pumpkin purée and 1 tablespoon of pumpkin pie spice or cinnamon to make a pumpkin spice pudding.
- Using vanilla Greek yogurt, add matcha powder to make a matcha pudding. Add more honey or agave to sweeten since matcha can be bitter.
As long as there’s a ratio of (a little less than) 1/4 cup of chia seeds for every cup of liquid, the possibilities are endless! Enjoy!
