Chia Seed Pudding

Creamy, light, and refreshing-this chia seed pudding is a staple in my breakfast rotation! There’s nothing that feels more like “living your best LA life” than starting the day with a bowl of this pudding. It’s easy-to-prep and nutrient dense! 

There are endless variations you can create with just a simple base: 

1.) To a blender, add 1 cup of milk and 1 cup of plain or Vanilla nonfat Greek yogurt. Add a drizzle of honey to sweeten and a dash of vanilla extract. Blend until smooth. 

2.) Pour the mixture into a storage container, and add a little less than 1/2 cup of chia seeds. Stir until the chia seeds are evenly suspended within the mixture. I like to split this into two shallow containers. Chia seeds will sink in a deeper container, which creates inconsistency in the texture of the pudding. 

3.) Place the containers in the fridge overnight to thicken into a pudding-like consistency. 

4.) To serve, top it with cacao nibs, hemp seeds, pumpkin seeds, desiccated coconut, granola/protein cereal, and fresh fruit, such as mangos or berries. 

Variations

You can consider blending different ingredients into the base to create different pudding flavors:

  • 1 tablespoon of cacao powder to make a chocolate version. Top with sliced strawberries or raspberries. 
  • Fresh fruit such as mangoes or strawberries to make a fruity pudding base. 
  • Use vanilla Greek yogurt. Add 1 cup of pumpkin purée and 1 tablespoon of pumpkin pie spice or cinnamon to make a pumpkin spice pudding.
  • Using vanilla Greek yogurt, add matcha powder to make a matcha pudding. Add more honey or agave to sweeten since matcha can be bitter. 
As long as there’s a ratio of (a little less than) 1/4 cup of chia seeds for every cup of liquid, the possibilities are endless! Enjoy!

When You Come From Water

On Saturdays
feet bare on the dusty road, 
my sisters and I would run to the Mekong River. 

Pulsing through the heart of my town, 
straw boats anchored along the river beds, 
many would come to the water's edge, 
its steady flow our life force. 
Some cleaning soiled sheets and plates, 
some awaiting fish to catch their bait. 

We held hands as we would wade 
into the warmth of the sun-soaked stream, 
the water enveloping me in a hug.
When you come from water, 
you feel its abundance, 
its desire to give and its nature to love.

Tofu Scramble & Stewed Tomatoes on Toast

A hardy, protein-packed tofu scramble smothered in stewed tomatoes, all atop a thick slice of sourdough. This isn't your on-the-go, 5 minutes before work starts, pick it up, shove it in your mouth while standing type of toast. No, this is your 'sit down with a knife and fork while sipping your coffee or morning tea' toast. Nutritious but full of flavor, this warm and comforting dish is easily meal-prepped, so you can quickly indulge in a Sunday brunch kind of breakfast every day of the week. Move over, avocado toast. I reckon this will quickly become a breakfast staple for me.

With what I wear, I am at fault for another's inability to focus. With what I wear, I assume responsibility for another’s decision to harm me. I know it sounds bizarre. Smoked Chickpea & Tempeh Caesar Salad

One of my favorite restaurants, Veggie Grill, serves this healthy but delicious salad called the Savory Kale Caesar. What makes this so tasty are the smoky oven-roasted chickpeas and vegan "bacon" made from tempeh. I always order the Half Salad, Half Side option, finishing off my meal with a side of sweet potato fries. Here's my take on one of my go-to orders.
